Week 2: Bob’s Red Mill on Sale!

We’ve known from the start of this journey that our grocery bill would go up.  Some things we have to buy rather than use what’s in our freezers, because I used sugar when freezing garden goodies and making jelly, not knowing I should be paying attention to whether it was cane sugar or beet sugar.  Specialty flours and products cost more than the regular old stuff.  And we’re eating a wider variety of fresh fruits and veggies, rtahter than my usual ways of buying what’s in season and on sale.

Yesterday, though, I ran into some good luck.  I was shopping at the Hilltop Hy-Vee in Mankato, Minnesota, which has a nice natural foods section, and Bob’s Red Mill products were 20% off.  This is a big deal, because these things aren’t cheap, and we’re using a lot of them these days.  Many of the flours and baking mixes, as well as gluten-free oats, are from Bob’s Red Mill.

My grocery bill still was quite high for the number of bags I carried out of the store, but it was nice to get a bit of a discount on many of the items.  The Bob’s Red Mill sale at Hy-Vee runs through Saturday at most stores.

Day 7: Corn Bread

Lunch today was leftover soup, but as I was sorting my numerous bags of different flours, I found a package of Bob’s Red Mill Gluten-Free Cornbread Mix
and decided to give it a try.  It was a pleasant surprise–the flavor and texture were very good, and everyone liked it.  My son is excited to take this in his school lunches.  Now I just need to remember where I found the mix so I can pick up some more.

It’s our daughter’s birthday today, and one of family traditions is that they get to choose what’s for supper on their big day.  She’s decided on pizza and a brownie-cake.  My son has agreed to have buckwheat pancakes while the rest of us eat pizza, and the last slice of the cake I made earlier in the week rather than a brownie.

Usually we’re trying to do things together, with all of us eating the same thing as much as possible, but we’d discussed early on that his siblings’ birthdays would be one occasion when we’d make separate meals.

One week down.  So far, so good.  We’ll continue to muddle through.
